Germknödel Baked Oats - vegan & protein-rich

Vegan, rich in protein, and incredibly delicious! 🍂
These steamed dumpling baked oats are the perfect snack for cold days and make a nutritious breakfast for athletes. With almost 30 g of protein per serving, they support muscle growth, while oats provide valuable fiber for healthy digestion. Perfect for meal prep – they stay fresh in the fridge for up to 4 days!
For this recipe, Lisa used OMNi-POWER® PROTEIN PLUS Vanilla – a vegan multi-component protein made from fava bean, pea, rice, and sunflower!
Ingredients (for 3 servings):
- 100 g oats
- 1 tbsp chia seeds
- 30 g OMNi-POWER® PROTEIN PLUS Vanilla
- 1 banana or 100 g applesauce
- 3 plums
- 20 g poppy seeds
- 1/2 tsp baking powder
- 1 pinch of salt
- Soy vanilla yogurt (approx. 150g per serving)
- Honey (or agave syrup for vegan)
Preparation:
- Preheat oven to 180°C (350°F) top/bottom heat.
- In a large bowl, thoroughly mix oats, 400 ml plant-based drink, mashed banana or applesauce, chia seeds, and salt.
- Add protein powder and baking powder and stir well.
- Pour 2/3 of the mixture into a baking dish lined with parchment paper. Mix the remaining mixture with poppy seeds and 1 tbsp of plant milk and spread it as a "topping".
- Halve the plums, remove the pits, and gently press them into the mixture.
- Bake for approx. 30 minutes until the surface is golden brown.
- Let cool completely, then cut into pieces. Store airtight in the refrigerator for up to 4 days.
- Serve with vanilla yogurt and a little honey.
